One popular theory revolves around General Tomás de Zumalacárregui, who needed a simple, nutritious, and easy-to-make side dish to feed his hungry troops, and he combined eggs and potatoes to create the first Spanish omelette. Another version suggests that a housewife in the region of Navarra accidentally invented the dish and served it to the general, who then popularised it among the troops.

In addition to these theories, there are claims that the creation of Tortilla de Patatas can be attributed to the town of Villanueva de la Serena in the province of Badajoz. This theory places the dish’s origins a few decades earlier, in the late 18th century.

On August 2, 2014, in Vitoria’s Plaza de la Virgen Blanca, a grand attempt was made to cook the world’s largest Tortilla de Patatas. Led by Chef Senen Gonzalez, twelve chefs collaborated on this ambitious endeavour, using an astounding amount of ingredients: 1,600 kilos of potatoes, 16,000 eggs, 150 litres of oil, 26 kilos of onions, and 15 kilos of salt. Despite their impressive feat, the Guinness Book of Records did not officially recognise their achievement. The omelette was cooked in separate portions and assembled, leading to disqualification. Surprisingly, the title of the world’s largest tortilla was awarded to Japan instead.
